A West Cork Summer

Let’s celebrate the summer with our special publication “A West Cork Summer”.

Hopefully we will have a well deserved and sustained period of high pressure where we can enjoy all the good things our region has to offer. From superb and dramatic scenery to wonderful boat trips exploring our islands or whale watching, fishing to cycling, walking, golfing and much more.

Apart from activities we have some great museums and heritage sites which will appeal to history lovers.

Our region has some wonderful, independent shops to suit book lovers, arts and crafts and textiles. It is a real pleasure to browse and select a memento  from this fantastic region.

As regards music most of the bars offer entertainment over the summer months so a great evening is assured. Most of the bars have the entertainment on their social channels so it is easy to find something that suits.

West Cork has a whole host of wonderful eateries so you are sure to find something that appeals to you. We are known for our quality meats and fresh fish caught from pristine seas.

We hope you enjoy your summertime in West Cork!

Irish Foodie Magazine - Spring 2026

Welcome to the jam packed, spring edition of our Irish Foodie magazine.

We believe that this issue carries some interesting features that we hope our readers will enjoy. We catch up with husband and wife team Bill and Ann Hillyard who have made Baltimore their home and run The Algiers Inn in the heart of this coastal village.

Our history consultant, Michelle O’Mahony, traces the history behind the Easter favourite, the hot cross bun while Frank Corbett from Co. Tipperary gives his take on the story of Corned Beef.

A regular writer for us, Caroline Hennessy asks How Posh Is Your Freezer?

As well as a roundup of West Cork Eateries we also have some tasty recipes for you to try.

Spring is such a great time to get out into the fresh air so we hope you enjoy our feature on great places to stop for a coffee and a sweet treat.

We hope you find something of interest in our magazine.

Until next time

A delicious plate of Lemon Asparagus Risotto with a browned leek butter sauce

Lemon Asparagus Risotto

Preparation Time: 10 mins
Cooking Time: 35 mins
Calories per Serving: 1350 kcal

This dish, lemon asparagus risotto, is a beautiful use of seasonal asparagus, and leeks, the creaminess of the rice as it cooks down slowly. The lemon cuts through that richness, and allows the earthiness of the vegetables to shine. Combined with the bite of the cheese crisp, this creates a textural variation that makes every bite a new experience.

Note: Parmesan contains rennet, so be sure to check the label to make sure that it says suitable or vegetarians, or alternatively you can use a semi hard cheese like Gouda for a similar experience.

French

Pesto and Mozzerlla Puff (pastry) Christmas Trees

Pesto and Puff Pastry Trees

Preparation Time: 8 mins
Cooking Time: 13 mins
Calories per Serving: 884 kcal
Yield: 8 - 12 puff pastry trees

Delicate, flaky layers of golden puff pastry filled with a rich, aromatic pesto spread make for a stunning and delicious pesto and puff pastry trees. Each pastry is brushed with a light egg wash for extra shine and topped with a sprinkle of grated Parmesan and a few toasted pine nuts for added crunch. The vibrant green of the pesto, made with fresh basil, garlic, and Parmesan, contrasts beautifully with the warm, crisp pastry shell. Serve these savory bites warm from the oven, garnished with a few fresh basil leaves for a pop of color, making an elegant, crowd-pleasing appetizer for any gathering.
