Welcome to the October edition of Gnó – The Irish For Business.
This is a new title for us and extends our repertoire of publications. With this magazine we aim to take a fresh look at businesses and entrepreneurship in the Cork Region.
In this edition we feature some new businesses, Laze & Graze, a new food venture based in Dunmanway and Homebot Ireland. We chat with Clara Mulligan who has grown a smart home robotic business company from her kitchen table.
Michelle O’Mahony, our history consultant delves into the retail revolution which came about with the advent of the cash register. We also chart Ireland’s success story through David Caldwell.
Gnó will be available to pick up in banks, credit unions, supermarkets, garage forecourts, salons etc throughout our region.

Irish Foodie Magazine - Autumn 2025
Welcome to the Autumn edition of our Irish Foodie magazine.
The longer, cooler nights and the morning mists herald the coming of the wonderful season of autumn, with its delicious, earthy flavours that are both satisfying and nourishing. A season for preserving the summer crop from jam making, chutneys etc or just freezing to use later. We have a couple of tasty autumn recipes for you to try.
In this edition Michelle O’Mahony, history consultant, traces the tradition of wedding fare from the wedding breakfast to the cake. Matt Brownie, the Kiwi Culchie gives us a run down of his visit to the wonderful Borough Market in South London. Caroline Hennessy meets the unflagging Sally Barnes who has been so inspirational over the years.
As usual we have a round up of West Cork eateries for you to try.

Butter Poached Hake with Spinach and Basil Puree, and Roasted Courgette and Aubergine
Perfect for those warm summer nights (when we get them). This dish is light, herby and satisfying every time. Ideal for when you don’t have the time to spend cooking, or don’t want to heat up the kitchen too much, but you still want a delicious dinner.

Lemon Asparagus Risotto
This dish, lemon asparagus risotto, is a beautiful use of seasonal asparagus, and leeks, the creaminess of the rice as it cooks down slowly. The lemon cuts through that richness, and allows the earthiness of the vegetables to shine. Combined with the bite of the cheese crisp, this creates a textural variation that makes every bite a new experience.
Note: Parmesan contains rennet, so be sure to check the label to make sure that it says suitable or vegetarians, or alternatively you can use a semi hard cheese like Gouda for a similar experience.

Pesto and Puff Pastry Trees
Delicate, flaky layers of golden puff pastry filled with a rich, aromatic pesto spread make for a stunning and delicious pesto and puff pastry trees. Each pastry is brushed with a light egg wash for extra shine and topped with a sprinkle of grated Parmesan and a few toasted pine nuts for added crunch. The vibrant green of the pesto, made with fresh basil, garlic, and Parmesan, contrasts beautifully with the warm, crisp pastry shell. Serve these savory bites warm from the oven, garnished with a few fresh basil leaves for a pop of color, making an elegant, crowd-pleasing appetizer for any gathering.

Burnt orange, Strawberry, raspberry & white chocolate panna cotta
Panna Cotta (translated from the Italian means cooked cream) or in our case it will be a cream set with gelatin, we want the cream to remain soft, unlike other gelatin-set desserts which go hard, this is easily flavoured with your favourite ingredients like coffee, alcohol, chocolate and fruits.
