Acclaimed Head Chef Eddie Attwell brings a wealth of food knowledge to Eccles and is extremely passionate about sourcing the best of local and seasonal produce, ensuring Eccles’ tradition of using the finest ingredients from West Cork carries on. Thanks to Eddie’s culinary prowess, the hotel established a reputation for its excellent food. Eddie is dedicated to sourcing the best produce, with most of the ingredients on his menus picked fresh daily from the hotel garden and polytunnels which he installed to grow fresh produce when he began working at Eccles.
Prior to joining the Eccles team, among other career highlights, Eddie spent time in the 2* Michelin restaurant L’Enclume in Cumbria and has appeared twice on BBC’s Great British Menu. He was recognised as West Cork’s Local food Hero in 2019 and the hotel’s breakfast was a national winner at Georgina Campbell’s National Breakfast Awards 2020.
